Charcuterie Prep is Your Best Friend

The key to a standout spread? Prep.

How much you prep depends on the size of your board and how many people you’re serving but if you’ve got six or more coming over, get a head start the night before. You’ll thank yourself later.

    Think in Layers and Shapes

This is where the creativity kicks in.

Spring boards should feel fresh and alive, vibrant, colourful, and a little wild. Use shape and texture to keep things visually interesting:

    • Thin veggie sticks for structure, it lends itself to the whimsical flowing springy vibe

    • Cucumber roses for softness

    • Diagonal-cut kiwi or guava for colour and pattern diversity

    • Non toxic or quality faux florals, a celery stalk base or full broccoli crown as a bold, unexpected centrepiece

The goal is to make it feel organic and intentional... like the forest came to brunch.

    Let's Get Prepping!

Here’s how I break it down:

    • Start with dry goods. Open up your crackers, nuts, dried fruits, and breadsticks and have them ready.

    • Use a large cookie sheet or a few smaller ones to organize fruit, veggies, dips, meats, and cheeses in the fridge as you prep each item.

    • Make or portion out any dips, chutneys, or jellies and place them in the fridge to chill.

    • Wash and slice fruits

    •  and vegetables early and get them prepped and chilled.

    • Pull soft cheeses like provolone out of the fridge while you prep your produce. Letting them come to room temp makes shaping them into roses much easier.

    • Once softened, shape your provolone roses and return them to the fridge.

    • Next, prep your meats roses, folds, and accordions. Stack them on wax paper and chill.

    Suggested Build Order

    1. Open and portion out dry items (crackers, nuts, dried fruit, bread).

    2. Gather accents - small jars, ramekins, flowers, any spring-themed props.

    3. Pull everything from the fridge.

    4. Begin dressing the board by

placing a layer of greens around the board edges.

    5. Place your largest elements on the board first. Cheese roses, meat roses, meat accordions and ramekins (jars).

    6. Add blocks and slices of cheese (you can cube, cut diagonals, stack, etc. Get creative.

    7. Weave and layer in veggies using rows, curls, and creative shapes.

    8. Fill in the spaces with crackers, pretzels, nuts.

    9. Finish strong with berries, herbs, and floral accents (be sure live florals are non- toxic)

    Garnish Like You Mean It

Fresh herbs aren’t just for seasoning, they’re styling tools.

Thyme, rosemary, basil, mint and sage add colour, scent, and texture that tie the whole board together. Tuck them in around cheeses, drape them across bowls, or anchor them beside a ramekin.
