At Roots To Table, our passion for quality begins at the very roots of our process. From selecting the finest maple and walnut logs to the meticulous artistry of transforming them into exquisite cutting and charcuterie boards, every step is a testament to our commitment to excellence.

Our Unique Process
At Roots To Table, crafting stunning high-quality wood products is a labor of love and precision. Our dedication to quality begins from the moment we select the logs, ensuring each board is a masterpiece in its own right.
Step 1: Sourcing and Inspection
We start with selecting maple and walnut logs, focusing on pieces that are 7 to 9 feet long (best fit for our sawmill) with an average diameter of 13 inches. Our inspection process goes beyond just quality; we look for logs that embody the wild beauty of nature. We don't seek perfectly straight logs; instead, we choose those that will provide unique characters, ensuring that each piece reflects the essence of nature.
Step 2: Sawmilling to Thickness
Next our logs go to the sawmill, where we carefully cut the logs to a specific 'pre-kiln' thickness, anticipating the board shrinkage that occurs during kiln-drying. After being cut, the planks are thoroughly cleaned to remove sawdust (sawdust holds moisture) and stacked with wooden stickers placed between each board. These stickers are strategically positioned to allow proper airflow during the kiln drying process, ensuring even drying and preventing warping or cracking.
Step 3: Dehumidification Kiln Drying
The kiln-drying process typically takes about 20 days for hard maple and a bit less for walnut. During this period, we meticulously monitor the moisture levels to maintain the ideal condition of the wood. If the wood dries out too much, it's prone to cracking and brittleness. On the other hand, too much moisture can cause warping, mold, or even cracks after gluing. Our careful management of the drying process ensures each piece of wood attains a perfect moisture balance, which is crucial for producing high-quality, long-lasting products.
Step 4: Quality Assurance & Sorting
After kiln-drying, we unstack the wood for a detailed quality assurance inspection. Our team identifies and sorts the boards, first selecting the premium pieces for the finest live-edge charcuterie boards. We then categorize the remaining wood into three groups: those suitable for cutting boards, pieces for our glued crafted-charcuterie, and 'stickers'—the lowest quality used for spacing boards during drying. We commit to zero waste, repurposing even the smallest wood remnants, often fueling our workshop. This active and comprehensive approach enables us to utilize every part of the log, embodying our dedication to sustainability and quality.

We start our charcuterie board creation by stripping the bark from live-edge planks and planing them slightly above their final thickness, a step crucial for the subsequent surface sanding.
We then cut the planks to their desired lengths, preparing them for our CNC machine, where we carve the handles and add requested customizations.
Following this, we round off the handle edges and the board ends. This technique not only prevents cracking but also guarantees a smooth and comfortable grip.
Once shaped, we lightly mist the boards with water to raise the wood grains, paving the way for the final sanding. This thorough approach ensures each board's surface is exceptionally smooth, elevating the tactile experience.

Our process for creating cutting boards and crafted charcuterie begins with sending the selected boards through our RIP saw. This step slices the boards into strips, preparing them for gluing.
After ripping, we use a compound saw for precise length cutting. At this stage, we thoroughly inspect the wood, removing any imperfections like mold or holes to ensure top quality.
The next critical step is passing the wood through the jointer. While it's possible to glue the pieces directly after ripping, jointing, which removes 1/16 inch off the entire length, ensures straighter and more robust glue joints.
We meticulously apply FDA-approved Titebond III glue during the gluing stage, ensuring sufficient glue prevents voids and potential cracking. Each board is clamped tightly, with glue oozing out from every seam, a sign of a good bond. The boards remain secured for at least one hour — 80% of the glue's curing happens during this time. After removing from the clamps, they continue to dry for 24 hours to achieve complete curing.
Once fully cured, the boards are passed through a planer, ensuring perfectly flat surfaces on both sides.
We then utilize our CNC machine, cutting each board to its designated shape, carving out juice grooves, and any additional customizations.
Following the CNC process, we round the edges of the boards and mist them with water, setting the stage for a final sanding. This crucial step ensures each board achieves a smooth and refined finish.

Each of our boards is marked with the distinctive Roots To Table brand before finishing. Following this, we immerse the boards in a mineral oil bath for a full 24 hours, allowing them to fully absorb the oil.
Post-soak, we wipe off any excess oil and let the boards air dry. Once dry, we apply our homemade all-natural board butter, a blend of beeswax, mineral oil, and vitamin E. This treatment not only adds extra protection but also enhances the board's natural luster, bringing out the vibrancy in the wood's patterns.
Quality is our top priority. We conduct a thorough final inspection of every board, wrapping each one in butcher paper, readying them for shipment to ensure they reach you in perfect condition. Charcuterie and Cutting Boards receive our unmistakable Roots To Table brand before a final treatment of mineral oil and beeswax.
